Description
The acorn is the fruit (nut) of the oak tree (Quercus spp.), with a distinctive and iconic appearance that most of us associate with the yellowing leaves and cool breezes of the approaching autumn. However, most people do not know that every acorn is edible! Most acorns cannot be eaten raw, and the key to unlocking the edible uses of the acorn involve using water to leach out the astringent tannins, which otherwise significantly inhibit the digestive process and make the flavor intolerable. When properly processed, acorn flour is a rich, nutty, nutritious, massively underutilized wild food source! Of all plant foods in North America, the acorn was considered to be the most important food overall to the sustenance of indigenous tribes.
In this class focused specifically on this excellent but massively underutilized wild food source, you will learn how to identify, collect and process acorns into delicious food, including pancakes, porridge, cookies, and other baked goods. You will also learn about the basic nutritional content, and get to taste the acorn creations we make!
The class will be held at the beautiful Prairie Haven located in Graham, Texas (about 1.5 hours west of Fort Worth). This property is the home of the SkyEarth Outdoor Skills Gathering, and is an ideal location for learning outdoor skills of all types.

Contribution: $40 per person
Your signup includes 2.5 hours of hands-on experience foraging and preparing acorns during our class, learning identification, the opportunity to ask questions and taste our acorn flour creations (and bring some home if we have extra!), and a PDF detailing essential information on oak trees and acorns, including recipes.
Cancellation policy: You may cancel your reservation up to 48 hours prior to the class time, and will receive a refund minus a 20% cancellation fee. Alternately, you may roll your class reservation over to a future class (whether currently scheduled or not) with no penalties. Since our classroom is outdoors, classes will occur in a variety of weather conditions, including heat, cold, and light rain, but we will reschedule class in cases of heavy rain or thunderstorms. By purchasing a ticket to this class, you are agreeing to this policy.
